OK, we could rant on and on about the state of the meat business in America right now: the drugs, the pollution, the inhumane treatment of animals. (But for that, go to our blog.)
Marczyk’s feels so strongly about the state of meat in America that we go through great lengths to carry the best tasting naturally raised beef and pork, and that means Niman Ranch. Niman Ranch uses family farms to raise their livestock, and the cows and pigs are given room to roam, fed only vegetarian feed, and are antibiotic and hormone free. This thoughtful treatment translates into the best tasting meat in Denver. We’re proud to be the only store in Colorado to carry Niman exclusively. We dry age the beef on-site, and at the holidays you can see your prime rib hanging in our cold room.
Right after we opened in 2002, we got a call from a customer:
“Mr Marczyk, That pork I bought reminds me of the pork I ate growing up. It’s worth turning my stove on again!” There’s one word for the pork: mind-blowing. Local good guys Maverick Ranch brings us our chickens, which recently won "Best Tasting" in a Wall Street Journal article. www.maverickranch.com. Try our "roadkill roosters", a marinated semi-flattened chicken, crispy on the grill. At Thanksgiving, Maverick brings us delicious turkeys, both broad-breasted whites and heirloom breeds, raised right here in Colorado. They are the turkeyest turkeys in town!

Put passion into the production
Our longtime butcher, Jimmy Cross, can trim, tie, and prep anything your heart desires, from standing rib roasts to a whole pig. He writes the recipes for our handmade sausages, and is just a phone call away if you need something special. We use favorite classic and family recipes for pre-prepared dishes, like meatloaf, meatballs, steak or chicken fajitas, carné asada, and stuffed chicken breasts.
