Our cheese selection changes with the seasons. Spring blows in with raw milk cheeses from the mountains, flavored by the grasses the cows eat. Summer is the time for picnics and fruit and cheese plates, fall means beautiful big wheels of Lincolnshire Poacher and cheddars from Neal’s Yard in England, and winter means the King of Blues, Stilton, with a glass of port by the fire. Our cheeses include sheep, goat, and cow from the plains of Colorado and the hills of California; Italy, England, France, Holland and more, all kept alive in our cheese cave. We make Mozzarella twice a day to keep it fresh.
