• There are 894 classified varieties of cheese in France alone.
• Dairy absorbs flavors. When storing cheese in the fridge, make sure to wrap it in a paper bag or tin foil so other flavors in your fridge won’t infiltrate it.
• Pairing cheese with wine is easy: “What grows together goes together.” For example, pair a French goat cheese with a Rhône valley red or Chimay cheese with Chimay beer.

Shepherd’s Pie: Mmmm…meaty. Rich ground Niman Ranch lamb and beef with veggies and a layer of mashers on top.
Green chili: This will put hair on your chest. Made with slowly braised Niman Ranch pork, green chiles, onions, garlic, and spices. I took this to a potluck last night, huge hit.
Woman’s Bean Project Soups: Eat well for a great cause. Hearty bean soup mixes that you make at home. Add some Niman ham and fill the house with the great smells of fall!
Rice River Farms: A delicious change from pasta. These are blends of rice, wheat berries, couscous, and pastas, 4 different kinds. Put these on the side with our duck confit, which we ate last week and it was tender and crispy and off-the-charts good.
La Salamandra Dulce de Leche. Caramel sauce for fall. Serve it with apples, add a little brandy, over ice cream, or as frosting.
