Marczyk Butcher Jimmy Cross Makes the Cut for Cochon 555
Denver, CO – On Sunday, April 3, 2011, Marczyk Butcher Jimmy Cross, aka Jimmy the Butcher, will compete against one other Colorado butcher at Cochon 555, “a friendly competition where 5 chefs are challenged to cook a heritage pig for the awareness of family farms.” This one-of-a-kind event “provides pig-loving epicureans with a sampling of pork dishes served with wines from five different small wineries. After tasting, guests and a panel of 20 judges vote for the winning local chef (the Prince or Princess of Porc) who will travel to the Food and Wine Classic in Aspen to compete in the finale for the title of King or Queen.”
The two butchers will face off in a test of speed and skill, and be judged on:
25% speed/efficiency/yield
25% knife handling and dexterity of roast tying
25% presentation of oven-ready retail cuts
25% creativity and presentation
Jimmy Cross has been the Marczyk butcher since we opened in 2002. Here at Marczyk’s, we have been amazed at the increased popularity of butchering in the past few years. With popular books like The Omnivore’s Dilemma and films like Food, Inc, people are more interested in where their food comes from, and how it ends up on their table.

Jimmy’s meat tips are listed in the handsome new book from William’s Sonoma, The Cook and the Butcher. This book is just released in the Denver market.
Last fall, Jimmy handled the Bison Butchering workshop at the Art Meets Beast fundraiser for the Museum of Contemporary Art here in Denver. They created an excellent video of the event.
And next month, Jimmy will have the chance to show his mad knife skills to a curious crowd of pork lovers!
