Baked Salmon with Beurre Blanc
Ingredients
1 salmon fillet
1 Tbs olive oil.
1 C dry white wine
1/2 C white wine vinegar
2 Tbs finely chopped shallots
1 lb unsalted butter, cold, 1/4” cubed
Fresh thyme
Salt and Pepper
Directions
Preheat oven to 350˚
Lightly rub salmon with olive oil. Then season with salt, pepper and about a Tbs of fresh thyme.
Bake in a 350˚ oven, uncovered, for 12 minutes per lb.
Salt and white pepper to taste.
Put wine and shallots and vinegar in non-reactive saucepan, bring to boil and reduce to 3 Tbs liquid.
(For traditional smooth sauce, strain the shallots out.)
Over low heat, slowly whisk in butter. When you are down to your last 3 cubes, take off heat, whisk the last cubes in, season to taste. Pour over salmon and enjoy.
