Ashley Filmer’s Mother’s Day Brunch Quiche
9” pie crust, prebaked in the oven for 10 minutes, cooled.
Six eggs
1/2 cup half and half
1T Greek yogurt
Pinch nutmeg
Salt and pepper to taste
One bunch asparagus, trimmed, blanched, and drained
Five slices applewood smoked bacon, chopped and cooked till soft
4-5 oz raclette, cut into ½” cubes “It melted really evenly and was deeeelicious!”
2 green onions, chopped
Mix the eggs, half and half, yogurt, nutmeg, and S&P in a bowl.
Space the raclette cubes evenly in the crust with the asparagus, onions and bacon.
Pour egg mixture all over.
Cook in 425º oven for 15 minute, reduce temp. to 350º and cook 25 more minutes, until filling is set.
Add a salad with arugula, oranges or grapefruit, a basket of muffins and scones, you’re a hero!
