7 Cool Things to Do With Asparagus

1. Gazpacho: Steam asparagus and cool. Blend smooth with lemon and dash of olive oil. Season to taste with salt and white pepper. Garnish with diced red onion, halved cherry tomatoes, chopped flat leaf parsley, and cracked black pepper.
2. Asparagus "Slaw": Using a peeler, shave asparagus into a bowl. Add thinly sliced fennel, carrot ribbons, and red onion. Toss with your favorite vinaigrette.
3. Breakfast Sandwich: Steam asparagus, poach two eggs, and cook off bacon. Toast two pieces of bread and smear with sriracha mayo. Build your sandwich with asparagus, eggs and bacon.
